Aveleda Loureiro & Alvarinho and linguine with pesto sauce

- 500g linguine
- 1/2 avocado
- 2 handfuls of fresh coriander
- 1 handful of fresh spinach
- 60g parmesan cheese
- 1 clove of garlic
- 80 ml olive oil
- Juice of 1/2 lemon
- Seasoning to taste: salt and black pepper
- To finish: cherry tomatoes, burrata, dried fruit
- Place the avocado, spinach, coriander, garlic, Parmesan, olive oil, lemon juice and seasoning to taste in a food processor. Blend until smooth.
- Cook the linguine until al dente (check the cooking time on the package).
- Pour the coriander pesto over the cooked pasta and mix everything together.
- Finish to taste (suggestion: cherry tomatoes, burrata and dried fruit).
- Enjoy with Aveleda Loureiro & Alvarinho!
