Suggestion for a summer dinner: Hake with Shrimp Sauce and Aveleda Alvarinho.

Discover this recipe of hake with shrimp sauce, specially developed by Clavel's Kitchen. For this recipe, you will need:
 
For hake:
- 4 hake loins
- Salt and pepper q.s.
- 1 drizzle of oil
- 1 teaspoon of butter
 
For the sauce:
- 2 garlic cloves
- 1 bay leaf
- 1 drizzle of oil
- 15 cooked shrimp
- Salt and pepper q.s.
- 1 tablespoon of wine vinegar 
- 100 g of peeled tomatoes
- 60 ml of water
- 1 teaspoon of butter
 
Preparation:
For the shrimp sauce, saute the crushed garlic and bay leaf in oil and add the shrimp heads and shells (reserve the shrimp on another plate), salt, and pepper. Stir and cook well for 5 minutes. Add the vinegar and tomato, mix and cook some more. Add water and butter, bring to a boil, and crush everything with a blender. Pass the mixture through a strainer and add a little more boiling water if necessary.
 
Season the hake with salt and pepper and fry in a very hot skillet with the oil and butter so that it is golden brown all around (about 5 minutes in total).
 
Serve the hake over a bed of mashed potatoes and drizzle with the shrimp sauce.
